This and That

A few things around here lately...

I got these {maternity} shorts from Loft and they are amaze {shop them regular size here!} I mean, I usually wouldn't even wear black shorts, and I love them! They are a flattering fit that is smooth and a great length- not too short, and not awkward long. They are 30% off and sizes are selling fast! I went to buy the coral as well and they were already sold out in my size. Shorts are so hard to find, and I usually just throw in the towel before finding a pair I actually like. Side note, I also got this sweet ruffle top, and this shirt I mentioned in this post. Both are keepers and great deals!

Shown below in the regular/non-maternity version:

I made this cake last night! It was news to me that Krispy Kreme made a cake mix- my parents brought it in town after hearing about it, and after they couldn't find it in the grocery store my Dad actually purchased it on Amazon. I'm guessing it's more expensive online than if your grocery store carries it, but it was fun to try it out! My opinion on the cake- tasted so great! Super easy to make and just enough sweet with the glaze. I don't think it was identical to a KK donut, but it is a cake, afterall. And I would bet it would be perfect with morning coffee/tea! Yum. I think it would be fun to bring to a shower/luncheon...not only is it delicious but also, something to chat about!

The drapes for Weeks' new room are coming along- basically I have to hem them and we are done! The rods came and I love the finish- they are matching up perfectly with the brass campaign hardware on the ikea rast hack. I will have those reveals next week for ya!

Pumpkin Everythang

Would you believe me if I told you I've never had a PSL? True story! Honestly, it doesn't sound all that appealing to me but I am mainly a tea drinker anyway. {And because my husband is probably googling PSL- it stands for Pumpkin Spice Latte! ;) } However, I did a quick search on my own pinterest boards and whoa, apparently I secretly love some pumpkin. Anyway, I thought this week would be a good time to bring our neighbors a festive fall pumpkin treat. They have brought us over several things and I have yet to return the favor. Embarrassing! But maybe I can make up for it with something amazing. If you have a tried and true pumpkin recipe, please shoot it my way! Most of these can be found under my Sweet Tooth board.

Cool Whip Cookie Cake

Today I'm sharing one of the best summer desserts in the history of summer desserts- Cool Whip Cookie Cake! I have so many memories of my Mom making this dessert as a kid and it being brought to summer gatherings. Kids love it and adults might love it even more since its so easy!

Ingredients for a Large Cake:
-2 Packages of Chips Ahoy Cookies
-2 Containers of Cool Whip (I bought an extra but didn't need it)
-2 Cups of Milk
-Berries for topping (optional)

Directions:
-Dip each cookie quickly in and out of milk, and lay them across bottom of dish so it is completely lined with cookies.
-Next, add a layer of Cool Whip- enough to cover the cookies completely
-Repeat for additional layers, ending with Cool Whip on top (Mine had three layers)
-Refrigerate for several hours to set
-Top with berries if desired!

Hope you enjoy!

Crockpot Cobbler

Sometimes you just need an easy summer dessert.

I've never put something sweet in my crockpot before, but let me tell you this is the way to go. Whip this easy dessert up a few hours before dinner and your dessert will be freshly hot out of the crockpot!

CROCKPOT COBBLER

1-1/4 cups all-purpose flour, divided
2 tablespoons plus 1 cup sugar, divided
1 teaspoon baking powder
1/4 teaspoon ground cinnamon
1 egg, lightly beaten
1/4 cup fat-free milk
2 tablespoons canola oil
1/8 teaspoon salt
2 cups fresh or frozen raspberries, thawed (I used fresh)
2 cups fresh or frozen blueberries, thawed (I used fresh)
Low-fat ice cream, optional

In a large bowl, combine 1 cup flour, 2 tablespoons sugar, baking powder and cinnamon. Combine the egg, milk and oil; stir into dry ingredients just until moistened (batter will be thick). Spread batter evenly into a 5-qt. slow cooker coated with cooking spray.

In a large bowl, combine the salt and remaining flour and sugar; add berries and toss to coat. Spread over batter.

Cover and cook on high for 2 to 2-1/2 hours or until a toothpick inserted into cobbler comes out clean. Serve with ice cream if desired. Makes 8 servings.

the berries covered in the sugar mixture- yum!

I usually skimp out on desserts when we have friends or family over simply because I don't have enough time. Anything that I can make ahead of time is a win-win in my book. This was so nice to have baking Sunday afternoon! It would be perfect for easy summer entertaining, but impressive and fresh at the same time.

Enjoy!

Funfetti Cake Dip Deliciousness

A few weeks ago I posted about all of the Funfetti recipes floating around and finally got to try one this weekend! I was scared to try one with just Stephen and I to indulge, so I waited until Friday night when we had a tailgate style party to test it out. I made this Funfetti Cake Dip and let me tell you friends, it does not disappoint!

I mean, how fun {pun intended} is this photo from Eat Yourself Skinny?

The best part? It was so easy. This is all you need: {minus the buns in the background}

1 (18.9 oz) box Funfetti cake mix
2 cups fat-free plain yogurt
1 cup lite Cool Whip {I used regular this time}
Fat-free animal crackers {I used mini graham crackers}

In a large bowl, mix together cake mix, plain yogurt and Cool Whip until completely combined and you see no more lumps. Cover with plastic wrap and allow to chill for about 4 hours. Garnish with additional sprinkles if desired and serve with crackers, and enjoy!

We had a ton of this left over and we snacked on it throughout the weekend. I think next time I will split the recipe in half and save the rest of the cake mix for another batch later. My brother {not a big dessert fan} even joked that for his birthday all he wants is a bowl of this with a candle in the middle of it! It is the perfect dish to bring to a dinner party for a quick dessert that everyone will be talking about.

Happy Sweet Tuesday Friends!! xo.

Let's cut to the chase. I know one of you lovely readers have tried some sort of Funfetti this or that. Tell me your favorite recipe so I can decide which one to make this week!
