We had the best dinner last night.
A winning combination from a few ideas I saw on pinterest and we have a new favorite recipe. I don't know about you but this household loves some Mexican food. In fact, we usually make some sort of Mexican dish once a week and have even coined the tradition "Taco Tuesday" because by Tuesday we are up for something really tasty for dinner.
1. Preheat your oven to 400 degrees.
2. Make your own taco seasoning! I have been wanting to do this for quite some time now and I regret not doing it sooner. I followed Mel's recipe, which is below....
HOMEMADE TACO SEASONING
INGREDIENTS:
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Pinch of cayenne pepper
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon table salt
1/2 teaspoon black pepper
DIRECTIONS:
Mix all spices together until well combined. Use immediately or store in an airtight container in your spice cabinet and use as needed.
I quadrupled the recipe and stored the rest in a Tupperware for future use.

3. Brown your ground beef and drain off excess fat. Add in 1 1/2 tablespoons of taco seasoning and 1/3 cup of water. Simmer for a few minutes after mixing.
4. Assemble your tacos. Stand your hard taco shells upright in a baking dish and fill with ground beef mixture. Top with mexican cheese and bake for 9-11 minutes.
5. We topped ours with diced tomatoes and sour cream.
I can't say enough how much better the homemade seasoning is than the packet. It is a must!
The next time we want to make these all we need to grab from the store is ground beef and toppings, since we already have our seasoning and leftover taco shells. Taco Tuesday just got a whole lot easier!

I'll have to try this recipe. I make all sorts of Mexican all the time. Normally I buy soft tortillas because I can make wraps and so many other things out of them. I think I need to get some hard taco shells next time.

Looks good! Although, I would have to say that chicken tacos and quesadillas are my favourite Mexican dishes.

I agree homemade seasoning is the best, and so easy! I haven't baked tacos before--love the idea, they look delicious!
