Eat Your Greens

Lately we have been trying to incorporate lots of salads into our dinner menu. Stephen and I would both love to drop a few pounds for summer and eating healthy is a must. I am still exercising but I can't devote nearly as much time as I used to. And quite frankly, at the end of the day I would rather hold Weeks and cuddle than fit in a longer workout! 

I have never been a huge salad eater. To be honest, the same old salad makes me feel like a rabbit and I just get so tired of it. However, I am really into chopped salads lately and they do not skimp on flavor and variety. These are two that are amazing, trust me!

The first one is slightly adapted from Natalie's Chopped Mexican Salad. I couldn't find the exact cheese she used and I use Steamfresh Packets of Corn instead of off the cob. I made this the day she posted it,  and again last week we made it for our parents. It is incredible. We bought extra lettuce and halved the ingredients and saved in containers in the fridge to fix for lunch the next day. It might be on our weekly rotation. I had a really pretty picture of it, but I guess I deleted it to make room for the 1,000 baby pics consuming storage on my phone!

The next one is a BLT Chopped Salad and I swear to you, it tastes like you are biting into a BLT sandwich, but better. My parents and I made this last week when I stayed in Raleigh with them for a few days, so Stephen is yet to try it. But it will be happening soon.



Hopefully our plan of action of eating healthy will pay off :)

I m trying to eat healthy and exercise more too, this salad sounds amazing!! Anything with bacon is always delicious.

I agree, chopped salads are the way to go! I love a the crab, avocado, corn and tomato salad on skinnytaste.com - I put that on some romaine, and both me and my husband love it.

These look right up our alley. Natalie always has great recipes on her cute blog!

I think the best salads always contain a fruit, a cheese, and a nut. So a typical salad for us would be arugula or mesclun with blue cheese, dried cranberries, and walnuts or feta, sliced pears, and shelled pistachios. Or goat cheese, grapefruit segments, and salted peanuts. I could go on and on!

I am obsessed with a chopped salad with the following ingredients:
bacon (must have)
avocado (must have)
diced chicken
feta cheese
cherry tomatoes
hard boiled eggs
romaine lettuce
Nothing beats a refreshing summer salad during the dog days of summer. I can't wait to try adding the corn to my chopped salad
